Sentimental Favorite: Summer Salad

You know how in each family there is 1 dish that you eat that outsiders just cannot wrap their heads around? Ours is called Summer Salad, and it is traditionally made only in summer. My mom does not know where she discovered this bit of awesome, but I found a similar recipe in a very old Joy of Cooking.

1 box elbow macaroni
3 cans tuna
1 bag frozen peas and carrots
3 stalks celery, chopped
2 small/1 large sweet onion chopped
1 green pepper/1 red pepper or combination, chopped
Mayo (to taste)

Cook the macaroni and peas & carrots separately. In a large cooking pot or mixing bowl add all ingredients, and stir until well blended.

Now in a schism that is matched only by the debate over what color Cloister wanted the hats to be in Fuchal , Summer Salad can be eaten hot or cold. I have been known to microwave mine. But with enough s&p it is good cold.

No picture of tonight's batch, and it's a little disappointing because I forgot celery! It's really not the same. I might have to go and buy some tomorrow am to improve it, as I am taking it to share with Anners.
