So this was a big failure this month. Between grief eating and going out of town for a funeral, how could it not be? I did try to make better choices than usual if they presented themselves, and also did some things like eat 3 pounds of strawberries in a day
What? You don't do these things? They were on sale for 88 cents a pound, and they were going to go bad. Better to provide me with some Vitamin C.
This isn't an impossible goal at all, so I think I am going to pick it up again in May.

New Salad: Supermarket Sushi
1 avocado, sliced
1/2 cucumber, seeds scoped out and thinly sliced
1/2 cup shaved carrot
1/4 cup wheat berries or brown rice
salt, rice wine vinegar and olive oil to taste
The object is to recreate the taste of inauthentic supermarket sushi.

The 175 Vegetable Servings Challenge
So I had another brilliant idea for a project--actually eat the 5 recommended servings of fruits and vegetables per day in April. Although I love them, vegetables are the hardest things for me to work into my diet. And as we are moving into the cheap and fresh season, I though I'd make an effort to broaden my horizons, try new recipes and shift my diet a bit in a more healthful direction.
April has 30 days, and five a day equals 150 servings. However, I know myself and concentrating on getting enough on a weekly/monthly basis is easier for me to manage rather than hitting 5 a day. The extra 25 servings are a special challenge--if I eat that many, I'm buying a reward, to be determined later.
Stay tuned, as I will be posting weekly on the what I ate and how I tried it.
