Bountiful Baskets And Meal Plans

I picked up my first basket from Bountiful Baskets on Saturday. For $15, I received:

1 pound green beans
1 head curly romaine lettuce
1 head cauliflower
2 pounds carrots
4 small sweet potatoes
1 box of 8 Brown Turkey figs
6 bananas
About 1.5 pounds little Thompson seedless grapes
4 large peaches
3 pears
7 little Italian prune plums

The fruit is mostly unripe, but the vegs are in good shape. The cauliflower is being paired and roasted with Indian spices for a cocktail party to celebrate unemployment on Thursday. The carrots might be turned into this carrot and lentil dish. The sweet potatoes will be roasted and paired with corn and black beans for a salad. But what to do with the figs? Suggestions are welcome!

Figs: cut off the tops and stuff them with blue cheese (or another creamy cheese if blue isn't your thing), drizzle with olive oil and dust with salt and pepper. Either skewer and grill for 2 minutes, or roast for a few minutes until the cheese is melty.

I would roast some of the carrots and sweet potatoes with the cauliflower, too! All that stuff is awesome with Indian-y flavors. I like mine with some Trader Joe's naan and a big blob of dal on top.
